Last night I was cooking for my boyfriend and my son. We’re all pretty much vegetarian, so I pulled out a box of Trader Joe’s Pad Thai mix. In the box are the rice noodles you steam in hot water to cover for about five minutes. I had to sauté some chopped up vegetables in a large skillet. (I added some frozen to the fresh, which tastes just fine.) Then I just drained the softened noodles and added them to the vegetables. In the box there’s also a packet of sauce, so I stirred that in. Because Thai food often uses peanuts, I stirred in a few tablespoons of natural chunky peanut butter for flavor and protein. I have to say that it really tasted good. The others agreed, and I’ll do this again.
